Litti Chokha is a popular dish from the state of Bihar in India. It is a traditional dish made of stuffed baked dough balls (litti) served with a side of roasted eggplant and potato mash (chokha). It is a popular street food and also served during festivals and special occasions.

Here’s how to make it:

Ingredients: For Litti:

  • 2 cups whole wheat flour
  • 1 cup sattu (roasted gram flour)
  • 1 tablespoon ajwain (carom seeds)
  • 1 tablespoon kalonji (nigella seeds)
  • 1 tablespoon salt
  • 1 tablespoon ghee
  • Water as required

For Chokha:

  • 1 large eggplant
  • 2 medium potatoes
  • 2 medium tomatoes
  • 2 medium onions
  • 2 green chilies, chopped
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon mustard oil
  • 1 teaspoon red chili powder
  • Salt to taste

Instructions:

For Litti:

  1. In a mixing bowl, add whole wheat flour, ajwain, kalonji, salt, and ghee. Mix well.
  2. Add water gradually and knead into a stiff dough.
  3. Cover the dough and let it rest for 30 minutes.
  4. In a separate bowl, add sattu, chopped onions, green chilies, coriander leaves, and salt. Mix well.
  5. Divide the dough into small balls and flatten them with your palms.
  6. Place a spoonful of the sattu mixture in the center of each flattened dough ball and close it tightly to form a stuffed ball.
  7. Preheat the oven to 350°F. Place the stuffed balls on a baking tray and bake in the oven for 20-25 minutes or until golden brown.
  8. Remove from the oven and brush with ghee. Keep them aside.

For Chokha:

  1. Roast the eggplant and potatoes on a gas stove or grill until they are completely cooked and the skin is charred.
  2. Remove the skin and mash the eggplant and potatoes in a mixing bowl.
  3. Add chopped tomatoes, onions, green chilies, coriander leaves, mustard oil, red chili powder, and salt. Mix well.

To serve:

  1. Serve the hot litti with chokha on the side.
  2. Garnish with chopped coriander leaves and lemon juice.
